VINEYARD: Espejo is an unique vineyard of 3.6 Ha, planted in 1999 by Isaac, it has a special features due to ther are less pebbles than in another of our vineyars, and it has more clay proportion. Besides subsoil is totally composed by limestone and calcareous marl. Finally, its northwest orientation makes it one of our colder and wetter wineyard, offering us a more balanced maturity in our warmest place.
ELABORATION: The grapes were harvested by hand in 15-kilo crates. Once in the cellar, the clusters are totally pressed and must ferments in used french oak barrels of 500 and 600 liters without temperature control. After that, malolactic fermentation and ageing for 11 months. Later, wine keeps for 7 months in stainless steel tanks. Bottling without finning, nor filtering.
